Today's Scoop recipe is Super Easy Tomato Cheese Toast. We love this recipe from eatgood4life.com because it's a twist on a grilled cheese or simple sandwich that might just give your week a yummy change of pace.
And if you have other favorites in your kitchen, this simple recipe can become something special. Add a slice of turkey under the cheese ... then maybe some basil leaves or red pepper flakes after your cheese is nice and bubbly! Go with your favorite wheat bread, gluten free, or whatever you've got! : D
Super Easy Tomato Cheese Toast
6 whole grain bread slices
6 slices provolone cheese
6-10 slices tomatoes, sliced
Place the 6 slices of bread in a baking tray. Arrange the slices of cheese over the bread followed by the tomato slices.
Place the toasts under the broiler for 6-7 minutes. Make sure you look closely after 5 minutes to make sure they don't burn. They turn very quickly!
And when someone else articulates that thing we've been feeling so deeply, we can feel grounded - so connected - so filled with purpose.
